Egg Fried Rice
- Cook rice, as directed [ I used Minute Rice]
- Thaw peas and carrots, set aside.
- Softly scramble eggs in medium skillet or wok. Set aside in small dish.
- Add oil to pan, then stir in scallions, garlic, carrots and peas, soy sauce; cook about 2 minutes.
- Add in scrambled egg, combine thoroughly.
- Stir in cooked rice. Combine well. Serve.
