Chicken Lettuce Wraps!

You can never have too many recipes for this particular goodness, but I must admit, this is my FAVORITE recipe for these to date!

~Ingredients
2 or 3 Chicken Breasts (approx. 3/4 Lb. Total), Diced into 1/2 inch cubes [or shredded] 
1 TB Rice Vinegar 
1 TB Brown Sugar 
1 medium onion
1⁄4 teaspoons dried red chili pepper flakes
1 tsp ground mustard
1⁄4-1/2 teaspoons Ground Ginger [powdered], or 2 TB minced fresh
1 TB Sesame Oil 
3 TB Soy Sauce
1 cup Diced Green Onion [entire bunch, about 6 onions]
 3 cloves Garlic, Minced [ 2 TB]
1⁄2 cup carrot, cut into skinny straws
*optional* 1 can [8oz] sliced water chestnuts or bamboo shoots, drained, finely chopped
**also optional if you like a bit more sauce, add 1/2 cup beef broth.

 8-16 leaves of Lettuce [any kind you like], Washed And Dried

Prep Time 15 Minutes Cook Time 15 Minutes
Servings 3-4
Difficulty Easy

~Instructions
For stir fry sauce, mix together rice vinegar, brown sugar, ground pepper, ground ginger, sesame oil, and 3 tablespoons of soy sauce, making sure to dissolve brown sugar [I heated it all for about 30 seconds in microwave to be sure]. Set aside. 
Heat oil in pan over medium to medium-high heat. Add diced chicken and brown (about 4 minutes). 
Remove chicken from oil. 
Add onions, carrots, and garlic to pan; brown about 1-2 minutes. When onions and garlic are brown and tender, add stir fry sauce, and browned chicken. Saute mixture for a few minutes and remove from heat. Spoon chicken mixture into individual lettuce leaves. 
***I added some crunchy Chow Mein noodles to each roll up, for a bit of crunch--SOOOOO Delicious!!
