Cheesy Zucchini Tomato Bake



Coat 9X9 baking dish with non-stick spray.

In small bowl combine:
2 cups grated sharp cheddar cheese
1/2 teaspoon basil
1/3 cup grated [ powdered] parmesan cheese,
two crushed cloves of garlic [or 1/2 tsp powdered]
small onion , diced small [ or 2 TBSP dried onion flakes, or 1 tsp onion powder]
1/2 teaspoon oregano
1/2 tsp salt
black pepper, to taste

Other ingredients you will need, but NOT add to this mixture:

2 medium zucchini, sliced 1/4 inch thick
2 small, or 1 large tomato, sliced thin
3/4 cup seasoned bread crumbs
3 TBSP butter
************************

Finely slice zucchini and layer half of the slices in the baking dish. Sprinkle about 1/4 of the cheese mixture over the zucchini. Next, thinly slice tomatoes and layer them on top of the zucchini. Again, sprinkle about a quarter of the cheese mixture over top. repeat layers once more.

In small sauce pan melt 3 TBSP butter over medium heat. Once melted, add bread crumbs, stir until combined. Sprinkle clumpy bread crumb mixture over casserole.

cover the pan with aluminum foil.

bake for TOTAL of 55 minutes at 375 degrees.***At 30 minutes mark, remove foil, *** then continue baking for the remaining 25 minutes.
