(adapted from mykitchenescapades.com)
4 chicken breasts [or 3 cups shredded, cooked chicken]
1 C Greek yogurt
1 c fresh shredded/grated parmesan cheese, [from block of cheese, not can]
1 tsp Lawry’s Season Salt (This is NOT regular table salt. It is a orangey-red mixture of seasonings.]
1/4 tsp pepper [to taste]
1 tsp garlic powder
1. Preheat oven to 400 degrees and spray the inside of a 9x9 or 9x11 glass pan. Lay the chicken inside the pan.
2. Mix together the remaining ingredients and spread evenly over each piece of chicken, being sure to cover all the exposed raw meat (so it doesn't dry out.) Sprinkle on a bit more fresh parmesan over all the chicken.
3. Bake uncovered for 35-40 minutes. This dish is even better the next day, so just reheat in the microwave!
**alternative prep- make as Casserole: use shredded cooked chicken, combine with cheesy goodness and top with extra shredded Parmesan, bake for 30 minutes, uncovered.
