Scottish Cock-a-Leekie Soup

I've got some Scottish blood in my veins and wanted to try and find a couple of traditional Scottish recipes in honor of that.
So here is Cock-a-leekie [ chicken and leek] Soup


Cock-a-Leekie Soup
1/2 onion, chopped
1 stalk celery, chopped
1 parsnip, chopped [though not exactly native to Scotland, you can use 2 medium Carrots here-very similar in taste]
3 leeks, chopped (WASH THOSE BABIES!!-recipe said white and light green parts only— but Dark green veggies are where the antioxidants are, so I used mostly the dark green parts and only about half of the white.)
4 cloves garlic, minced or pressed [um, not a traditional Scottish addition either, but , Dude, it’s soup, add some garlic]
4-6 cups chicken stock
1/4 cup barley [some recipes say EITHER barley OR potatoes are used- some add long grain wild rice instead]
2 medium or 4 small potatoes, chopped
1 tsp dried thyme
*many recipes call for prunes to be added, but I’m just not eating prunes in my soup. *


In 2 TB butter or oil, saute onion, leeks, and garlic until soft. Then add broth and rest of ingredients. Bring to boil, then reduce heat to medium-low and Simmer, covered, for 45 minutes. Remove chicken and shred, then return to soup and serve.
