Hearty Taco Chili

6-8 servings
  • 1 pound ground beef or turkey
  • 1 can (16 ounces) Kidney or Pinto beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1.5 cups frozen corn kernels [or drained can of corn]
  • 1 can (8 ounces) tomato sauce
  • 1 small onion, chopped
  • 2 packets taco seasoning or 2 servings MY Taco Seasoning Recipe
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 3/4 cup water
*Optional: 1/2 green pepper, diced

Serve with: Corn chips, sour cream and shredded cheddar cheese

In a large skillet, cook beef/turkey and onion over medium heat until meat is no longer pink; drain. Add the beans, corn, tomatoes, tomato sauce, taco seasoning, and water. Cover and simmer for 30 minutes, stirring occasionally.
