1 cup pumpkin puree (the unseasoned kind) [or 1.5 cups cooked sweet potatoes]
2 cups water
2 cups milk
2 tablespoons raisins (golden or regular)**optional**
4 TB butter
3 teaspoons pumpkin pie spice OR: 2 tsp cinnamon, 1/2 tsp ground nutmeg, and 1/4 tsp ground cloves [or allspice]
2 cups quick cooking oatmeal
Maple syrup, for serving
Milk, for serving
In large saucepan over high heat, combine the pumpkin puree, water, milk, raisins, brown sugar, and spices. Bring to a boil.
Add the oatmeal. Turn the heat down to low and cook according to your oatmeal instructions; mine usually takes about 15 minutes. Stir often.
Serve with brown sugar and milk or cream.
Additioanl toppings include dried cranberries, dates, chopped walnuts or pecans.
Why do I do this blog?
