No-Bake Chocolate Oatmeal Cookie Bites



Do you ever find yourself NEEDING a sweet little chocolate something, but there are no deserts in the house to speak of and you really don’t want to go through the time and hassle to bake something? Well, then THESE are for YOU!
Around here we call these no-bake Nomnoms, because they are DELICIOUS--and quite healthy too.

Yield: 18-24 cookie bites
1/2 cup coconut oil [or butter]

3/4 cup sugar

1/2 cup cocoa

1/2 cup milk [oat milk]

1/2 cup creamy peanut butter[almond butter]

2 teaspoons vanilla

1/2 tsp salt
*1 TBSP oat flour *optional for added fiber*

3 cups dry quick-cooking oats


1. Add everything but oats into a medium sauce pan.

2. Bring to a rolling boil and simmer for 3 minutes

—stirring often.

3. Remove from heat.

4. Stir in the oats and drop by heaping teaspoon

 onto parchment paper.


Refrigerate these nomnoms for 1-2 hours to set up [if you want]. They can be refrigerated in an airtight container for up to 2 weeks (or freeze for several months). They taste great out of the refrigerator, but are even better if left to sit at room temperature for just a few minutes before eating. 

*I normally store them in layers, on parchment paper, in an airtight container on the counter-- they stay fresh about 7 days--NOT that they ever stick around that long.

Well, because I like easy to make, flavorful dishes with a moderate fat count, and a wide variety of them. This blog is the perfect place to bring together all of my favorites for easy access to pull up to use when it's time to make dinner.
