White Bean Dip

I want some right now!

1 (15-ounce) can white Cannellini or Northern beans, drained and rinsed
2 cloves garlic
2 tablespoons fresh lemon juice
1/4 cup Extra Virgin olive oil
1 TB dried parsley
Freshly ground black pepper
1 teaspoon dried oregano
*optional* 2 diced green onions

Just cover beans with water in small pan. Boil, then simmer and cover for 30 minutes. 
Drain all but about 1/2 cup of the water and add  all other ingredients. Heat an additional 10-15 minutes, stirring occasionally, to work in garlic and oregano flavors. 
Lastly, beat  with electric mixer or food processor, until smooth.
Serve with tortilla chips of your choice.
